Kimchi Style Carrot & Celery Salad
1 medium carrot
1 large stick of celery
1 small clove of garlic
1/8th tsp hot chilli flakes
1 tbsp fish sauce
1 tsp maple syrup, honey, or sugar
Grate the carrot, thinly slice the celery, and crush the garlic. Mix everything together. Wait as long as you can tolerate.
